Asparagus Soup for the Road

Spring might finally be here. Don’t put your coat away yet! Spring means asparagus season. Yay! Guess what? It’s also baseball. lacrosse, soccer and basketball season. Not to mention gymnastics, choir, dance, etc, etc. I don’t need to rub it in, I’m sure. So many activities every day, especially for those with multiple children. Even with just my two, meal times are starting to get tough. If you work out of the house, it can be extremely difficult to plan healthy lunch options that don’t take a lot of time.

Want a yummy lunch (or dinner) that you can make ahead and take with you? It will wait for you and is super low carb, weight watcher friendly and very healthy. I love asparagus soup but it can take about a half hour to make it. Then you need to wash the pan and the blender. Plus, my kids and dh aren’t that crazy about it so I eat it over and over. BORING. Anyway, I figured out a way to make it whenever I want and it’s so easy.

Thrive Life Asparagus Soup for the Road by Jodie Pelinsky

  • 1 cup Thrive Life freeze dried asparagus
  • 1 teaspoon Thrive Life freeze dried onion
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon Thrive Life chicken bouillon
  • 1/8 teaspoon salt
  • optional topping: 1 tablespoon Thrive Life shredded cheese (cheddar, cheese blend or mozzarella, not recontstituted)

Process all ingredients except the cheese in a magic bullet for about 10 seconds until the ingredients become a coarse powder. If you like your soup with a little more texture, process a little less. Pour the dry mix into a thermos that will hold at least 14 ounces of liquid. Place the thermos under your Keurig coffee machine dispenser. Remove the coffee pod if there is one. Close the Keurig lid and press brew for the largest cup setting (about 1 1/4 cups). No Keurig? Just add about 1 1/4 cups boiling water. Stir with a spoon to mix the soup up. Sprinkle the cheese on top and close the lid as quickly as you can! Take to work or school with a piece of fruit and you are GTG! The soup will cook in the thermos and be perfect by the time you are ready for lunch. If your kids like this soup, it makes a great lunch addition.
